  2. Toast the bread on one side, and butter the un-toasted sides.
  3. Season both slices on the buttered side with salt and black pepper and a little dried thyme.
  4. Add your filling to the toasted side of one slice of bread. Some thin-sliced Swiss first....

  7. Now put the lid on toasted side down. Press down, and put in a preheated sandwich toaster for about 6-7 minutes. Check to see if it's browned nicely, if not, give it a couple of minutes extra.
  8. Before plating, cut and trim any unpleasant bits from your sandwich. I find scissors are the best tool for this.
