Beautful purple tinge from the yam. I had some frozen purple yam in the freezer and I had already used one for making yam chiffon a few weeks ago. Not wanting to attempt that again so soon (still getting over it), I decided to make yam talam instead. I found a recipe by Amy Beh and gave it a go.

  1. Heat a steamer over medium-high heat..
  2. Grease the molds with vegetable oil..
  3. In a big bowl, add sweet purple yam purée, tapioca flour,rice flou, granulated sugar, and salt. Mix well..
  4. Gradually pour the coconut milk little by little. Keep stirring until all the ingredients mixed completely. Strain the mixture. Pour the mixture into the molds 3/4 full. Steam for 7-10 minutes depending on how big your molds are..
  5. In another bowl, mix together ingredients B. Strain the mixture..
  6. Pour mixture B on top of mixture A until the molds are full. Steam again 7-10 minutes..
